HP200/201 Project Course 2020/2021: Food Insecurity at Clarkson University

Each year the second-year cohort of the Honors Program undertakes a multi-disciplinary project challenge that addresses a real-life, current problem. This academic year, the problem selected for the HP200/201 course sequence is food insecurity on campus. As in recent years, the course will be coordinated by Marshall Issen of the Reh School of Business, who brings project management expertise to the effort. The Honors Program is seeking faculty/staff experts to act as consultants or  “coaches” for this effort. Commensurate with past practice, a modest supplemental salary remuneration is provided each semester for the consultants.

Food insecurity is becoming an ever-increasing problem at many universities.  Clarkson students have not been immune to this problem.  Food pantries, funding for meal plans, and various forms of financial assistance are some of the ways that this problem has been addressed.  There have been both formal processes in place at some universities as well as more ad hoc approaches to this problem.

The Sophomore Honors Project will be studying this issue and will work on developing a comprehensive plan that addresses the need for the Clarkson student community. The project will include such things as looking at what other universities do to address student food insecurity, studying the current state of how Clarkson has approached this problem and the creation of a template /process for implementing food pantries on campuses.  The project will also include recommendations for funding and establishing a food pantry on the Clarkson campus.   Specific areas that will need to be addressed include identifying a location,  materials, structures, procedures, etc.
